About the coffee
El Divisadero is a 6 hectare property on one of El Salvador's oldest farms, Finca Himalaya. This plot, located at an altitude of 1,600 meters, is mainly planted with Bourbon, Caturra, Pacas and Pacamara. El Divisadero has a very high quality clay and volcanic soil that produces coffees that are often Cup of Excellence winners. For this microlot, Mauricio has isolated a plot of Red Bourbon and leaves the cherries on the coffee trees after ripening. This is a technique also used in viticulture, called late harvest, which allows the fruit to develop more concentrated aromas.
